This Redwood Empire Pipe Dream Bourbon hales from Sonoma Country, California, and is apparently named in honor of an actual redwood tree named “Pipedream”.

I guess this bourbon has a big repetition to live up to.

Which probably explains the big bold flavors that this Pipe Dream bourbon brings to the table. From the first scent, to the first sip, this is a strong, flavorful bourbon.

The nose is mildly sweet, full of toasted wood and char. Don’t let the nose fool you, the moment you take the first sip this bourbon fills your mouth with a swirling, complex flavor profile. It is wood char with a little sweetness under it, which finishes on a strong nuttiness that quickly turns to black pepper.

This is not a bourbon for the weak hearted.

Scoring – Redwood Empire Pipe Dream Bourbon

I did enjoy sipping this Redwood Empire Pipe Dream and can see myself wanting more in the future. It’s not a dram I’d drink as a casual sipper, but on those occasions I want something full flavored and strong, this will absolutely be a go to, which is the reason this scored an 81/100.

Pros

  • Wonderfully complex bourbon.
  • Mildly sweet opening that instantly becomes woody char and black pepper.
  • Deep and flavorful.

Cons:

  • May be too much for new bourbon drinkers.
  • Flavors may be too much for some.
  • The bottle is really tall. No, seriously, it doesn’t fit onto the shelf with my other bottles. I had to put it on a different shelf because its so tall.

Kavanagh 16 Year Irish Whiskey

I was honestly a little nervous about this Kavanagh 16 Year Old Irish Whiskey after having to pour out a bottle of regular Kavanagh Whiskey for scoring 3/100. At the same time I was interested to see what 16 years of additional aging would do for this whiskey.

So how did it hold up?

I have to be honest and say that this is a budget whiskey and the 16 year age statement is very deceiving. Why? I feel like these are the rejected barrels for something else they are selling. Sure it has a 16 year age statement, but its still not as good as Tyrconnel Single Malt which is the same price (for me) and no where near being even close to Redbreast 12 Year.

The Score – Kavanagh 16 Year Irish Whiskey

I did finish the bottle, but I kept finding myself licking my lips and kind of “puckering up” against the strange aftertaste. I am ranking this at a 66/100, but there are much better options for the price, and this is not a bottle that I will be buying again.

Pros

  • Budget 16 Year Old Irish Whiskey. Where are are you going to get a 16 year old bottle for $50 bucks.
  • Nice honey and butter cookie notes. (At least until the funky aftertaste hits.)

Cons:

  • Doesn’t really hold up to other bottles at the same price points that don’t even have an age statement.
  • Better options available at the $50 mark.
  • Strange burn and chemically aftertaste.

Knappognue Castle Irish Whiskey 12 Year

This single malt Knappognue Castle 12 Year is finished in bourbon barrels. It was first produced in 1998, at the Cooley Distillery. In 2011, Beam Inc. purchased Cooley for $95,000,000, so someone walked away with just short of 100 million dollars. In my area, this Knappognue Castle 12 Year costs approximately $50, but prices vary every time I shop, so there could be big differences between my price and what you see at your local whiskey/bourbon reseller.

Knappogue Castle 12 Year – Empty Bottle

The Nose

The nose is pleasantly filled with sweet vanilla and butter cookies. I really enjoyed swirling this whiskey in a Glencairn Glass and just breathing in its lovely scent.

The Palate

The palate is sweet vanilla and spice that ends with a bit of pepper from the time the whiskey spent in the bourbon barrels.

The Score – Knappognue Castle Irish Whiskey 12 Year

I can’t help but compare this to Tyrconnel’s Single Malt. Tyrconnel doesn’t have an age statement, but they are within $5 of each other, and I honestly found the Tyrconnel and this Knappognue Castle 12 Years to be quite similar. I think I need to buy another bottle of each and do a blind tasting, because my memory is blurring the two together. Which means that this and Tyrconnel’s Single Malt are tied with an 87/100.

I may go back and update both the Tyrconnel’s Single Malt and this score, because I think a head to head is worth it for a tie breaker in the future.

Pros:

  • Intoxicating vanilla and spice.
  • I love the buttery cookies this brings out on the tongue.

Cons:

  • The time spent in the bourbon barrels seems to have left a bit of pepper on the aftertaste that takes away from the rest of the experience.

Whiskey Dreams – Bushmills 10 Year Irish Whiskey

I honestly didn’t find Bushmills without an age statement to be a very sippable dram. It scored a 62/100, putting it in the “Mixers or On Ice” category, so I was curious what 10 years in a barrel would do for it.

The good news is that the extra time aging smoothed out the rough edges. Some of those edges left a displeasing aftertaste. What surprised me about this Bushmills 10 Year is that while it is much smoother, that strange tannin driven aftertaste is still there. Whatever char they use in the barrel must be the driver. At least the 10 Year smooths it out and lets you appreciate the sweet butter cookies that hides just beneath that layer of woodiness.

I found that a little bit of water really opens up this Bushmills 10 Year and lets you appreciate the sweet fruitiness and butter cookies that gets overpowered by the tannins when you sip it right out of the bottle.

Oddly enough, I just bought another bottle because I didn’t realize Bushmills rolled out a new bottle design in 2021. My very visual brain thought I was picking up something I hadn’t tried before. You can tell I’ve been enjoying the 2nd bottle since I picked it up.

I do think the new bottle design is way more distinctive. Plus, the new cork is much nicer.

Overall, the Bushmills 10 Year is a huge improvement over the original Bushmills, which is why it is scoring 10 points higher. That gives Bushmills 10 Year Irish Whiskey a 72/100, making it Sip Worthy.

It was good, and I will drink it whenever I can pick up a bottle on sale, but unfortunately for Bushmills did not make it into my Whiskey Safe. That means I don’t on keeping a few bottles on hand for if the power goes out permanently.

Pros

  • Easy to find.
  • Soft sweet nose with hints of butter cookies.
  • Smoother edges when compared to the original Bushmills.

Cons

  • The things I love about Irish Whiskey are subtle. There are butter cookies, but they are under the malt and oak.
  • At this price point, around $50 I would go with Tyrconnell or Knappogue Castle.
